The Opportunity
Are you a culinary professional with a passion for the sea and a knack for leadership? The Lamont-Doherty Earth Observatory, a premier research unit of Columbia University, is seeking a skilled Steward to lead our galley operations on the R/V Marcus G. Langseth.
In this vital role, you aren’t just a chef; you are the heart of the ship’s morale. You will manage the preparation of high-quality, nourishing meals for up to 55 world-class scientists and crew members while navigating the unique challenges of life at sea. Key Responsibilities
Department Leadership: Act as the Head of the Steward Department, supervising the Cook and Utility personnel. You will manage performance, document progress, and collaborate directly with the Captain on departmental improvements.
Culinary Excellence: Plan, cook, and serve three to four nutritious meals daily, seven days a week. This includes preparing freshly baked goods and ensuring a varied menu that sustains the crew during long missions.
Resource Management: Maintain a "running inventory" of all food stores, linens, and supplies. You will be responsible for cost-effective ordering, receiving, and stock rotation (FIFO) to ensure zero waste and constant readiness.
Sanitation & Compliance: Maintain a pristine, sanitary galley and mess deck. Ensure all waste disposal strictly adheres to MARPOL regulations, EPA Best Practices, and vessel environmental policies.
Safety First: Oversee galley safety, conduct orientations for new crew members, and ensure the proper use of Personal Protective Equipment (PPE) and adherence to Job Safety Analysis (JSA) guidelines.

Compensation
Per 30 days on board pay is approximately $14,000 Pre-Tax based on estimated overtime after Base Hourly Rate - Overtime and Vacation Pay
Requirements
Qualifications
Experience: Minimum of two years of relevant offshore catering experience.
Education: High School diploma or equivalent; a degree from a vocational or culinary institution is highly preferred.
Licensing & Docs:
o Valid U.S. Merchant Mariner’s Document with a Food Handler endorsement.
o STCW Endorsement (Basic Safety Training and Proficiency in Designated Security Duties).
o Safe Food Handlers Certificate.
Physical Requirements & Life at Sea
This role is physically demanding and requires a true adventurer’s spirit:
Required to pass a Pre-Employment DOT Drug Screening to be hired and are subject to random DOT drug screening during employment
Ability to work 8–12+ hours per day, 7 days a week, for 3 months continuously.
Comfortable living in cramped quarters and working in adverse weather conditions/violent vessel motion.
Capability to climb steep ladders, enter/exit hatches, and handle moderate weights.
Must meet USCG physical evaluation guidelines (NVIC # 2-98) and participate in emergency drills (life rafts/rescue boats).
