ESSENTIAL JOB FUNCTIONS:
  • Maintains a consistently high level of food quality, kitchen productivity and supply line for all food outlets.
  • Maintains food, labor and other expenses at budgeted levels and completes financial analysis and reports as assigned.
  • Continuously evaluates all standard menus and consistently strives to improve food costs, volume, quality, attractiveness and efficient preparation of all food related items.
  • Maintains and evaluates existing food concepts and develops creative new food concepts that insure the highest quality food and profitability
  • Communicates and work closely with front of the house management to ensure a quality employee/guest experience.
  • Coaches and develops culinary, restaurant, banquet and stewarding leaders using a consistent approachable demeanor, setting performance expectations and clearly articulating expectations.
  • Provides constant leadership, training, tools and operational support for employees so that they may effectively perform their necessary job duties.
  • Serves as a leader for all foods employees while fostering teamwork, employee morale, motivation, open communication and a positive work environment.
  • Strives to continuously improve and streamline departmental operations through the assessment of policies & procedures, work processes and program effectiveness/value.
  • Ensures that the minimum level of labor is used to perform the required level of service without impacting service standards.
  • Maintains and improves the cleanliness and food quality levels in all outlets of the operation. I mplements and enforces sanitation and safety practices and procedures.
  • Conducts periodic inspections of all assigned areas including line, preparation, pantry, clean-up and storage and administers safety policies and procedures pertaining to the procedures.
  • Keeps others informed on all information pertaining to receiving, parstocks, and pricing.
  • Recommends changes including hiring, promotion, demotion and release of personnel.
  • Recommends wage and salary adjustments for personnel within established limits.
  • Adheres to regulatory, departmental and company policies in an ethical manner.
  • All other tasks as assigned by the Director of Food & Hotel.

REQUIREMENTS:

  • Bachelor's Degree, Culinary Arts Degree, or equivalent work experience preferred.
  • Minimum three years experience as an Executive Chef in a high volume full service food operation or a minimum five years experience as an Executive Sous Chef in a high volume full service food operation
  • Culinary expertise in multiple specialties is preferred.
  • Proven track record in improving kitchen efficiencies, quality, food and labor costs. Must possess excellent interpersonal, customer service, financial analysis, communication, team building and problem solving skills.
  • Knowledge of all phases of food administration, cost controls and administration is required.
  • Computer skills (Micros, Excel, Word, Outlook, etc) required.
  • Must pass ManagerLap assessment.

JOB DEMANDS:

  • Ability to respond to common inquiries or complaints from customers and employees
  • Ability to communicate one-on-one and to groups to explain policies and procedures to persuade others to accept or adopt a specific opinion or action
  • Ability to effectively present information and/or a convincing argument to executives
  • Must be able to respond calmly and make rational decisions when handling customer needs and concerns
  • Must have physical ability to walk 5+ miles during a work day
  • Must be able to lift fifty (50) pounds
  • Excellent written and oral communication skills
  • Ability to push, pull, bend, twist, stoop, crouch, kneel, and balance when maneuvering in the work area
  • Ability to stand and walk for entire shift
  • Must be able to listen and respond to visual aural cues
  • Must be able to tolerate areas containing varying noise, temperature levels, illuminations, vibrations, and crowds
